Homemade Cornbread

Ingredients

  • 2 cups yellow cornmeal
  • 4 tablespoons flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 1/2 cups buttermilk
  • 2 eggs beaten
  • 2 tablespoons of melted butter or bacon drippings

Instructions

  1. Begin by preheating your oven to 400°F (200°C) and greasing a cast iron skillet or baking dish.
  2. In a large mixing bowl, sift together the cornmeal, flour, baking powder, and salt until well blended.
  3. In a separate bowl, whisk together the buttermilk and eggs until smooth.
  4. Gradually add the buttermilk and egg mixture to the dry ingredients, stirring gently to combine.
  5. Fold melted butter into the batter, making sure everything is mixed evenly.
  6. Pour the batter into the greased skillet and smooth the top with a spatula.
  7. Place the skillet in the oven and bake for 30 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  8. Remove the cornbread from the oven and let it cool slightly before serving.
