Homemade Cornbread
Ingredients
- 2 cups yellow cornmeal
- 4 tablespoons flour
- 1 1/2 teaspoons baking powder
- 1 teaspoon salt
- 1 1/2 cups buttermilk
- 2 eggs beaten
- 2 tablespoons of melted butter or bacon drippings
Instructions
- Begin by preheating your oven to 400°F (200°C) and greasing a cast iron skillet or baking dish.
- In a large mixing bowl, sift together the cornmeal, flour, baking powder, and salt until well blended.
- In a separate bowl, whisk together the buttermilk and eggs until smooth.
- Gradually add the buttermilk and egg mixture to the dry ingredients, stirring gently to combine.
- Fold melted butter into the batter, making sure everything is mixed evenly.
- Pour the batter into the greased skillet and smooth the top with a spatula.
- Place the skillet in the oven and bake for 30 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
- Remove the cornbread from the oven and let it cool slightly before serving.
